A packed lunch: one of life’s simpler pleasures | August 23, 2007

There are so many reasons to pack your lunch for work each day, the most obvious being that bringing your own lunch saves money. Ingredients for a packed lunch can be purchased with regular groceries, saving gas (which is important as gas prices rise ever higher), not to mention saving a sizable amount on the actual food each week (usually around $40!). As if the savings weren’t enough motivation, packing lunches carries the added benefit of being able to control the quality and portion size of meals, as well as conforming to any dietary restrictions you or your family may have. Dairy-free or vegetarian meals may be difficult to find at fast-food restaurants, but are easily created in the kitchen and preserved in a cooler. Ideas after the jump.

  • On cooler days, pack a hearty soup in a thermos. For those with access to a microwave at the office, soup can be packed the night before, and a bowl put in the lunch box for re-heating the next day. If a microwave is not available, quickly heat soup in the morning before pouring in the thermos.
  • Bran muffins (with raisins or apples) are a great alternative to snack cakes, that are both healthy and delicious.
  • Save sauce containers from takeout to use for salad dressing or dipping sauce for vegetable sticks.
  • Macaroni salad is an easy to make, tastes good all week, and is easy to pack in Tupperware containers.
